Chinese leek box: 韭菜盒子 tips

Dough:

  1. Add some salt into flour and mix
  2. pull some hot water and mix.
  3. add some yeast to warm water and pull in flour.
  4. add some oil and mix and kneed until smooth.
  5. raise for 30-60 min.

Inside:

  1. cooking oil until hot then turn lower heat
  2. add some salt to scramble eggs then pull in slowly and stir quickly so egg become small particles.
  3. rice noodle cook until soft then pull into cold water then cut.
  4. mix cut leeks with egg and noodle and add sesame oil stir thoroughly to lock in water.
  5. add salt, oyster sauce, white pepper etc. any flavor you wish.
